Courgette Soup


  • 3 courgettes
  • 2 large leeks
  • 1 large potato
  • 40g baby spinach
  • 40g rocket
  • 40g watercress
  • (120g of spinach on its own can be used)
  • 1 bulb Barbismoked SmokedGarlic™ –  Valencian orange SmokedGarlic™
  • 25g butter
  • 1 litre vegetable stock
  • white pepper
  • salt


  • Slice the leeks and gently fry in butter until softened.
  • Slice courgettes and dice potato into large cubes and add to pan with the spinach, rocket and watercress.
  • Place the whole smoked garlic bulb in the pan and add vegetable stock.
  • Cover, bring to the boil then simmer until all ingredients are soft – about 30 minutes.
  • Remove pan from the heat and take out garlic bulb and peel.
  • Return peeled cloves to the pan and blend then add salt and white pepper to taste.
