Barbismoked™ Aubergine Garlic & Cheesy Bake

Ingredients – Serves 4

  • 2 Medium sized Aubergines
  • 5/6 cloves Barbismoked™ SmokedGarlic™ with rosemary & thyme
  • 1 carton passata
  • 200g grated cheddar cheese
  • Fresh Rosemary 
  • Salt & Pepper to taste


  • Slice the Aubergines and layer them alternately in a dish with the passata, garlic and herbs, finishing with a layer of passata
  • Top with the grated cheese
  • Bake for 25/30 mins in a hot oven (approx 180, Gas 6) until the cheese is bubbling and going slightly crispy at the edges
  • Can be served as an accompaniment or as a main dish


Meal idea

Delicious with a fresh green salad, roast chicken and sweet potato fries
