Barbismoked™ Garlic Chorizo Pasta Sauce



  • Chop or slice Chorizo into bite size pieces and cook over a high heat for 5 mins til browned
  • Add onion, pepper and chilli (if used) and continue to cook tossing the ingredients together so they don’t scorch
  • Add the garlic, and any loose coconut ‘bits’  and stir – turn down the heat to medium
  • Stir in the rosemary sprigs and Kale or spinach
  • Add a splash of Balasmic vinegar and stir well,
  • Add the Passata and keep stirring
  • Add black pepper to taste  – turn the heat right down
  • Cover the pan and simmer for 10 minutes
  • Turn the heat off and let the sauce sit for an hour for flavours to fuse together
  • When ready to eat, cook the pasta or rice of your choice according to instructions on the packet
  • Heat the sauce thoroughly and serve piping hot with the pasta and a fresh salad
