Barbismoked™ Potato Wedges

Ingredients – Serves 4


Method

  • Slice all he potatoes in half and chop into wedge shapes
  • Arrange on a baking tray so each piece is separate and not overlaying others
  • Drizzle the oil over the potatoes
  • Using the garlic flakes in a grinder with black peppercorns, season the potatoes liberally 
  • Add salt to taste and rosemary if used then using your hands toss the potatoes until each slice has a light coating of seasoning
  • Bake in a hot oven (180/200, gas 6) until golden brown, turning after 20 mins and return to the oven until slightly crispy but soft in the middle
  • Serve as a snack or a side dish with coleslaw, mayonnaise or blue cheese dip
