Barbismoked™ Pumpkin Spinach & Walnut Pasta




  • Coat cubed squash/pumpkin in the 1tbsp of the oil and season – bake in a hot oven for about 20-30 minutes until it is soft and lightly caramelised.
  • Heat 2tbsp olive oil gently in a large pan, fry  Barbismoked™ SmokedGarlic™ on low heat stirring frequently so that it doesn’t burn, add chilli flakes and cook for another minute or so.
  • Cook spaghetti for a minute shorter that you would normally.
  • Put butternut squash cubes in the pan with the Barbismoked™ SmokedGarlic™ and chilli and slightly mash it. Add the drained pasta and washed spinach and mix well with the other ingredients.
  • Taste and season with pepper, lemon juice and additional salt and chilli if needed.
  • Serve immediately with chopped walnuts and lemon zest on top.
