Brown Sugar Slow Cooker Baked Ham

  • Put 2/3 of brown sugar evenly in the bottom of your slow cooker
  • Place ham on top
  • Add the pineapple chunks and juice over the top of the ham so some chunks fall into the juice
  • Add the rest of the brown sugar on top
  • Add the raisins on top of the ham
  • Add the garlic and star anise so some is on top of the ham and some in the juice
  • Cover and cook on high for approx 5 hours or until the fruit has caramelised and the meat is soft
  • Remove from the slow cooker and place in a dish
  • Make some slits with a sharp knife into the meat and spoon some of the juice over the ham so it soaks in
  • Spoon over the caramelised fruit and leave to cool
  • Serve sliced with salads, jacket potatoes, pickles, cheese….

  • Boil the rest of the juice until it has reduced and use as a dipping sauce or in stir fries.
  • Use some of the caramelised fruits in couscous (if there’s any left!)
