Chorizo and Bacon Pasta Sauce


Olive oil enough to cover the base of a large saucepan
1-1/2 lb of bacon…(bacon pieces are best) diced to small cubes
1 whole bulb of Barbismoked™ Italian Herb Smoked Garlic
1 whole chorizo sausage sliced thin
2 onions sliced
1 red or green pepper sliced
Chilli flakes
12 medium sized mushrooms cut into quarters
1-2 dessert spoons of oregano
Large tin of tomatoes
1 tblspn Tomato purée
1/4 pint of water

Slowly heat the oil and add the garlic and chilli. Gently fry until the garlic is soft (not browned) add the bacon and the mushrooms turning the mixture over and cook for 10 minutes,

Add the onions and pepper cover and simmer for another 10 minutes add the chorizo and tomatoes for a further 10 minutes

Add the oregano and water simmer for an hour before adding the tomato purée.

Serve with pasta or rice.
Cook’s tip:
Add some turmeric to the water you use for the rice
