Coronation chicken salad with cashews and raisins

Serves: 6
450g (1 lb) cooked chicken breast, chopped
2 sticks celery, thinly sliced
110g (4 oz) raisins or sultanas
110g (4 oz) roasted and salted whole cashew nuts
225g (8 oz) mayonnaise
1 heaped tablespoon curry powder
1 clove Barbismoked™ Madras Rubbed Spicy Smoked Garlic, minced
1 teaspoon lemon juice
salt and pepper, to taste
sprig of fresh basil, to garnish

In a large mixing bowl, combine the chopped chicken breast, celery, raisins and cashew nuts.
In a separate bowl, mix together the mayonnaise and the curry powder, adding a little curry powder at a time and taste testing as you go along. When desired taste is achieved, add the minced garlic and lemon juice. Mix well.
Add the curried mayonnaise mixture to the chopped chicken mixture and mix well, making sure that the chicken is well coated. Season to taste. Garnish with a sprig of fresh basil.
