Crispy Pork Slices with Sauteed Peppers


4 Slices Belly Pork

Seasoning of your choice – spicy and herby based work well

Light olive oil


1 Red & 1 Yellow Pepper

1 Large or two medium Onions

3-4 cloves Barbismoked™ Jamaican Jerk Smoked Garlic – crushed

Splash Balsamic Vinegar


Season the pork with your choice of spices/herbs

Fry the Pork on a high heat for a few minutes each side and transfer to an over proof dish

Cook for 30 Mins at 180 or until nicely browned and the rind is crispy

Meanwhile chop the onions and peppers into slices and add to the pan you cooked the pork in, stir fry till softened and add the crushed garlic, continue to cook until starting to caramelise making sure not the burn the garlic as it will taste bitter.

Add a splash of balsamic vinegar just before serving


Serve with Jacket Potato topped with grated cheese for a hearty midweek meal
