Italian Chicken with Mango Salad

Ingredients:

  • I pack of chicken thighs and drumsticks (4 of each) – skin on, trimmed
  • 7-8 Closed Cup mushrooms – halved
  • 1 Red Pepper, 1 Yellow Pepper – sliced
  • 1 Medium Red Onion or 2/3 large Shallots peeled and sliced
  • 1 Courgette – peeled and sliced thickly
  • 5-6 cloves of Barbismoked™ SmokedGarlic™ with Italian Mixed Herbs – crushed
  • Several sprigs of fresh rosemary and thyme
  • Tin chunky chopped tomatoes
  • Jar Italian Tomato & Chilli Sauce
  • Splash of Olive Oil
  • Salt & Pepper to taste

 

Salad:

  • 1/4 large iceberg lettuce – shredded
  • 1 Beefsteak Tomato – sliced thinly
  • Mango peeled & sliced into bite sized chunks
  • Handful of Red Grapes – cut in half
  • Half a cucumber – peeled and sliced into bite sized pieces
  • Optional – Few slices of shallot – finely chopped
  • 1 Avocado – peeled, stoned and sliced
  • Lemon Juice
  • Black Pepper

Method

  • Heat oil in a large pan and fry the chicken until browned all over
  • Add the shallots or onion, peppers, courgette, mushrooms, garlic and rosemary and thyme – stir fry all together for about 5 mins til the vegetables are softening slightly
  • Add the sauce and tinned tomatoes and stir into the mixture
  • Season to taste and simmer for about 45 minutes, stirring occasionally
  • Leave to rest for the flavours to develop til required

 

Salad

  • Layer the ingredients in a salad bowl and squeeze the lemon juice over, adding black pepper to taste

 

  • When ready, heat the chicken sauce til piping hot and serve with rice or pasta, with the salad on the side, use a dressing of your choice if desired
