Lamb Stew with Barbismoked™ Rosemary & Thyme SmokedGarlic™
Ingredients – Serves 4
  1. 1 large leg of lamb.
  2. 2 tbspns olive oil.
  3. 3 white onions (peeled and quartered)
  4. 3 cloves Barbismoked™ Rosemary & Thyme SmokedGarlic™ (peeled and sliced)
  5. 2 bay leaves, 6 black peppercorns and salt to taste
  6. 4 large potatoes (peeled and cut into chunks
  7. 6 large carrots (scrubbed and halved)

Method

  • Preheat the oven to 175C
  • Put  2 tbspns of olive oil in good sized casserole pot or deep sided roasting tray and fry lamb  until brown on all sides
  • Add the onions and smoked garlic and continue to fry for 3 more mins. Put in potatoes and carrots and 1 litre of water or stock plus bay leaves, peppercorns and salt. Bring to the boil. Cover tightly with lid or kitchen foil.
  • Bake in a pre-heated oven for 3 hours until tender, seasoning the gravy to taste.
  • To serve, pull away a portion of meat  and ladle potatoes, carrots and gravy.  serve with savoy cabbage and bread to soak up the lovely smoky garlic flavoured gravy.
