Mixed Veggie Stir Fry


  • 1 Red Pepper 
  • 2/3 single celery sticks 
  • Handful of Spring Greens
  • 4/5 Spring Onions
  • 6/7 small mushrooms
  • Handful of Bean sprouts
  • 1 firm Avocado
  • Fresh Coriander
  • 1 med Courgette
  • 5/6 cloves crushed Barbismoked™ Cold Smoked Garlic
  • Pack ready to use Noodles
  • Juice of half a lemon and some of the zest
  • Tablespoon sesame oil
  • Handful of salted peanuts or cashews
  • Splash of light soy sauce
  • Splash of white wine or sherry (optional)
  • Salt & Pepper



  • Peel and chop all the vegetables
  • Heat oil and fry the garlic quickly, stirring so as not to burn, for about 30-40 seconds
  • Add the courgette, spring onions, pepper, mushrooms, and celery, stirring and tossing the veggies together all the time so they don’t scorch for about 5 minutes or until softened as per your preference
  • Add the bean sprouts, and continue to stir for 2 minutes, add the lemon juice
  • Add the noodles, stir in evenly and continue stirring
  • Add a splash of soy sauce and wine or sherry if using – to taste
  • continue to toss all the ingredients together until coated in the  oily liquid and continue to cook until most of the liquid has evaporated
  • Finally add the avocado, lemon zest and coriander and toss everything together once more, then sprinkle on the peanuts or cashews. Season to taste.
  • Serve immediately with warm flat bread and dipping sauce or oil


Delicious as a main dish or as an accompaniment to sweet and sour chicken or beef in black bean sauce, or any other Oriental dish!
