Special Roast Duck - by Barbismoked™




  • Place the bulb of garlic inside the duck and roast for 45 minutes per kilo plus 20 minutes.
  • Use a spiralizer to make cucumber and carrot noodles or cut into very fine batons.
  • Cut spring onions into fine batons.
  • Roughly chop the mint and coriander.
  • Add all the vegetables into a large bowl.
  • Crush the peanuts.
  • Make dressing by squeezing the juice from the lime, finely dice the smoked garlic and add to the rest of the dressing ingredients
  • Pour dressing onto vegetables and mix well, top with crushed peanuts and serve with shredded roast duck.
